Both our Cervena Wapiti Elk, and our regular Wapiti X Elk come from the same small farms, raised in the same way, but only the most premium and most tender cuts make the cut to the Cervena Elk appellation – tenderloin, loin, saddle, ribs and Denver leg. A great flavor, but with one fifth of the fat of regular red meat. Being a good source for iron, phosphorus and zinc, Elk is a great red meat alternative. ![]() Elk has more protein and less cholesterol than beef, pork and even chicken. As with Venison, you get that surprisingly tender yet superbly lean dark red meat, without any of the toughness or gaminess characteristic to hunted game. Timberline Meat is a local meat shop based in beautiful Sandy, Oregon. Our Elk are part of the Never Ever Program, where antibiotics, steroids and hormones are never used. Elk meat has a much milder flavor than venison, with none of the gaminess associated with deer, but a distinctive, savory richness that sets it apart. ![]() |
